Hey all!
Did someone say eggplant? I sure did! Once again even though eggplant is not in my diet (not a fan of the texture or the flavor) I decided I can't let that hold back sawyer from trying eggplant. Well lets just say HE LOVED IT! My first go around with creating the first eggplant recipe I must say wasn't nearly as good as the second one I just made. However, here is the first recipe!
1 medium eggplant
Olive oil
1 tbsp rosemary
Salt to taste
Dash of Crushed red pepper flakes
First preheat your grill, medium heat. In the meantime slice your eggplant in 1/4" thick circle discs. Place all slices on a plate (easier when seasoning) drizzle olive oil to cover the tops of each eggplant slice. Add rosemary, salt, and a dash of pepper flakes to each slice. Place on the grill seasoning side up. Cook each aside for roughly 7 minutes. Turn grill off and remove to cool. Dice up the eggplant and add to the processor and purée!
